Ntsoanatsike
Also known as: Basotho dry sorghum bread
Dark, sour sorghum bread in a compact rounded presentation, documented in Lesotho field research.
About Ntsoanatsike
Ntsoanatsike is a traditional Basotho bread made from dry sorghum. Pulane Nkhabutlane’s field research records it across several regions of Lesotho, with sourness as a defining quality.
The bread has a dark colour that varies with the sorghum, ranging through reddish, greyish and deeper browns. Its texture is compact and heavy, with the grain giving a substantial body.
The layered polokoe presentation is a smooth rounded bread. Sorghum, water, salt and sourdough form this rendition, whose character centres on the contrast between its dense texture and sour taste.
