Omo Tuo
Ghanaian rice balls made by cooking white rice very soft, mashing it smooth and shaping it by hand.
About Omo Tuo
Omo tuo is a Ghanaian staple of soft white rice mashed and shaped into balls. This profile follows Guardian Life's complete three-ingredient version and keeps groundnut, palm-nut and other soups as separate accompaniments.
The rice has a mild, clean grain flavour with only salt for seasoning. Its neutrality lets the accompanying soup provide the main aromatic, savoury and spicy character.
The rice is pounded into a smooth, sticky mass and formed into compact white balls. It is softer and more cohesive than ordinary steamed rice, with very little visible separation between grains.
