Pancit Molo is a Filipino wonton soup. Vanjo Merano’s selected version fills the wrappers with ground pork and chopped shrimp, then cooks them in a chicken-broth soup with shredded rotisserie chicken.
Chopped shrimp are mixed with ground pork, minced yellow onion, sesame oil, an egg, garlic powder, salt and ground black pepper. Small spoonfuls fill wonton wrappers, which are folded into triangles and tucked inward at the sides.
Water and chicken broth are brought to a boil with the rotisserie chicken still on its bones. The chicken is removed and cooled, then its meat is separated from the bones and shredded.
The same shredded meat returns to the boiling liquid. Wontons cook in the covered pot before fish sauce and half of the chopped scallions are stirred into the soup.
Toasted garlic and the remaining scallions finish each serving. Merano highlights toasted garlic as an important part of his soup’s flavour, alongside the pork-and-shrimp filling and the chicken broth.
