Pasta alla norcina
Also known as: Norcina pasta

About Pasta alla norcina
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
GialloZafferano’s selected pasta alla norcina follows an Umbrian preparation with sheep ricotta and sausage. The ricotta gives ridged penne a creamy dressing alongside the browned pieces of meat.
The onion is finely chopped, and the sausage is removed from its casing and roughly broken up. Olive oil starts the onion with a whole garlic clove before the sausage browns in the same pan.
The garlic is removed and the pan comes off the heat before the sheep ricotta is added. Separately, the penne cook al dente in salted boiling water.
A ladle from that same pasta water loosens the ricotta and sausage dressing. The drained penne finish in the pan over a lively heat, allowing the dressing to coat them.
Parmigiano Reggiano is mixed in at the end, and the finished pasta is served very hot. This selected ricotta version sits alongside the recipe’s discussion of local cream and black-truffle variations.
