About Pasta con cavolfiore
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
GialloZafferano’s selected pasta con cavolfiore pairs shell-shaped pasta with cauliflower, garlic and dried chili. Finishing the pasta in the vegetable pan lets its starch bind a creamy coating around the shells.
The central cauliflower core and leaves are removed. The florets are separated from their stems, which are chopped roughly and kept for the sauce.
Garlic and dried chili flavour olive oil before the chopped stems enter the pan, followed by the florets. The cauliflower is salted and cooked while the pasta begins in a separate pot of salted water.
The garlic is removed, and a ladle of pasta cooking water moistens the cauliflower. Very al-dente pasta moves into the pan, where further reserved cooking water helps finish it with the vegetables.
A separate final drizzle of olive oil completes the mixture. The pasta is served immediately, with an optional extra pinch of chili; this selected pan-cooked cauliflower route is separate from the source’s quicker shared-boiling variation.
