About Pastizzi
Pastizzi are flaky Maltese savoury pastries. Lisa Parnis’s home rendition has a ricotta filling inside handmade, butter-layered dough, shaped into pinched individual parcels.
Ricotta and eggs give the centre its soft dairy character, with salt and pepper as seasonings. The layered pastry provides the contrasting flaky exterior.
Parnis describes pastizzi as a favourite traditional snack and recalls the Maltese shops where she enjoyed them. Her ricotta parcels form a small savoury serving within the Maltese Australian family food traditions celebrated by Nunna’s Kitchen.
