About Punjabi Lassi

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Dassana Amit’s selected Punjabi Lassi is her sweet yogurt drink with sugar, cardamom and the optional saffron, ice and almond garnish. This selection follows her wooden-madani method with cold water and fresh whole-milk curd, served chilled.

Green cardamom pods are lightly crushed in a mortar. Their husks are removed and the seeds are crushed to fine powder. Fresh chilled whole-milk curd is placed in the selected bowl and whipped with a wooden madani until smooth.

Sugar and cold water are added to the curd. The mixture is churned again until the sugar dissolves and a frothy layer forms on top. More of the same water can adjust a thinner consistency.

The prepared cardamom powder and selected saffron strands are mixed in. The drink is tasted and more of the same sugar is added if needed.

The lassi is poured into tall glasses and served straightaway in its selected chilled presentation. Optional ice cubes, extra cardamom powder and saffron strands, and supplied chopped almonds finish this selection.
