Vanjo Merano’s selected cheese puto is a steamed Filipino cake made with all-purpose flour, granulated white sugar, fresh milk, an egg and baking powder. Sharp cheddar appears both inside the batter and on top.

Flour, sugar and baking powder are sifted and mixed together. Milk and the egg are stirred in until the mixture becomes smooth.

Vanilla extract, melted butter and half of the shredded cheddar are stirred into the batter. The mixture is poured into small or medium moulds and arranged in a covered steamer.

After the first steaming stage, the remaining cheese is placed over the cakes. They steam again, then come out of the steamer and cool before being gently removed from the moulds.

The cakes are arranged on a serving plate. Merano presents this cheese-topped puto as a Filipino snack, with the cheddar divided between the smooth batter and the cheese finish.
