Rasgulla

Dassana Amit’s selected Rasgulla makes its own lemon-curdled milk chenna, kneads it with wheat semolina, forms smooth balls and cooks them in light raw-sugar syrup before a rose-water finish and selected chilled serving.

About Rasgulla

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Dassana Amit presents Rasgulla, also called rosogolla, as soft, spongy Bengali syrup-soaked dumplings. This account selects her own lemon-curdled chenna and semolina method, while her note that its origin story is contested remains an attributed qualification.

Whole milk is curdled with lemon juice, strained and rinsed in running water before draining under a weight. The resulting chenna is kneaded with unroasted wheat semolina and rolled into smooth small balls.

Raw sugar dissolves in water for a light syrup. The selected conditional milk addition removes impurities before filtering; portions of the same syrup are reserved for cooking adjustments and the serving bowl.

The balls cook covered in the remaining syrup, with the same reserved syrup added during cooking. They move to the serving bowl, and their cooking syrup joins after becoming warm; rose water follows after the whole mixture cools.

This selection uses the author’s later cold or chilled serving option, with some of that same syrup spooned into each bowl. She describes dumplings that are juicy and springy; nut garnishes and conversion into other sweets remain separate choices.
