About rosogolla

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Dassana Amit calls rasgulla rosogolla in her Bengali sweet recipe. Fresh chenna is kneaded into balls and simmered in a light sugar syrup, producing soft, spongy dumplings that soak up the syrup.

The selected chenna is made from whole milk and lemon juice. It is rinsed in running water, squeezed and weighted to drain, then mixed with semolina and kneaded into a smooth dough.

Small portions are rolled into smooth balls and covered with a moist cloth. Sugar is dissolved in water; the offered milk clarification is used if needed, and portions of the same sugar solution are reserved for cooking and serving.

The balls are gently slid into the boiling syrup and cooked covered, with the pan shaken rather than stirred. The reserved cooking portion is returned in stages. This selection uses the author’s spring-back check to judge the cooked dumplings.

The cooked rosogolla are moved into the serving portion of syrup. The remaining cooking syrup is allowed to become warm and added back; rose water is stirred in after cooling. After soaking, the recipe offers chilled service as an option, selected here.
