About Runebergintorttu
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Valio’s Runeberg tortes are small cakes finished with raspberry marmalade and a ring of icing. This producer version includes wheat flour, crushed almonds and prepared oat-cookie crumbs, and presents the tortes as a winter treat.
Butter is beaten with plain sugar and brown sugar, then two chicken eggs are added one at a time. The flour, crushed almonds, oat-cookie crumbs, baking powder and cardamom are combined separately.
The dry ingredients and whipping cream are mixed alternately into the batter. It is portioned into conventional Runeberg-torte moulds that have been greased and coated with breadcrumbs.
The tortes bake and cool. Valio also offers an optional punsch-and-water moistening after baking, alongside the raspberry-and-icing finish.
A small spoonful of raspberry marmalade goes onto each cake. Icing sugar is mixed with enough cold water to make a suitable piping consistency, then piped in a ring around the raspberry centre.
