About Sev Tameta
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Dassana Amit presents Sev Tameta as a Gujarati tomato curry topped with crisp sev. Her selected everyday preparation balances sweet, spicy and tangy flavors.
Tomatoes, ginger and green chili are rinsed and chopped. Mustard seeds crackle in the cooking oil, followed by cumin seeds, ginger, green chili and asafoetida.
The tomatoes are mixed with turmeric, red chili, ground cumin and ground coriander. Selected sugar and salt join the pan as the tomatoes cook until soft and pulpy.
Water is added to the same curry, which simmers before being poured into serving bowls. Supplied thicker sev is sprinkled on just before serving, preserving the crispness the author prefers.
Coriander leaves finish the bowls, and this selection follows the offered supplied phulka accompaniment. The source directs hot service; separately cooked-in sev and gathiya substitutions remain different choices.
