About Swiss roll
Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.
Sally McKenney’s selected Swiss roll combines a light chocolate sponge with sweet vanilla whipped cream and a chocolate ganache coating. Slices reveal the spiral of cake and cream, with the rich topping contrasting with the airy filling.
The egg whites are beaten with part of the granulated sugar until medium peaks form. The same eggs’ yolks are beaten with the remaining sugar, then vegetable oil, buttermilk, vanilla and optional espresso powder are mixed in.
The whites are incorporated into the yolk mixture, followed by sifted flour, cocoa powder, baking powder and salt. The thin cake bakes on a lined sheet, is turned onto a cocoa-dusted towel while warm and cools in its rolled shape.
Heavy cream, granulated sugar and vanilla are whipped for the filling, with marshmallow creme optional. The cooled cake is gently unrolled, spread with the cream and rolled again without the towel.
A separate portion of warmed heavy cream melts chopped semi-sweet chocolate for the ganache, with light corn syrup optional for gloss. The coating is poured over the roll, which is refrigerated before slicing and serving.
