About Tavche Gravche
Tavče gravče is a Macedonian baked bean casserole. Marta Pakovska’s household rendition combines large white beans with onion, leek, celery, tomato sauce and paprika, with sweet peppers and cherry tomatoes above the beans.
The beans are soft and substantial, surrounded by a thick vegetable sauce. Garlic, bay leaves and paprika bring savoury aroma, while tomato and sweet pepper add colour and gentle sweetness.
The casserole has a moist interior beneath its vegetable topping. It can be served by itself, with white bread, or with a sausage as an offered addition.
