About white sauce

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Good Food’s white sauce is presented as a béchamel. This selection uses whole milk, onion, bay, cloves, butter and plain flour.

The halved onion, bay and cloves are placed with the milk and gently brought to the boil. The heat is switched off, leaving the milk to infuse.

Butter is melted in a separate saucepan and plain flour is stirred in. Continued stirring forms the paste that the publisher calls a roux.

The onion, bay and cloves are removed from the infused milk and discarded. The same milk is added gradually to the roux while stirring until the sauce is smooth.

The combined sauce cooks with continued stirring until it thickens. The preparation finishes with seasoning to taste.
