About Zaru Soba

Research draft based on the references below. These notes describe particular recipes and presentations; ingredient connections are still being reviewed.

Namiko Hirasawa Chen’s zaru soba is a cold Japanese noodle dish. Her family recipe pairs chewy soba and shredded nori with homemade dipping sauce, scallion and optional wasabi.

Sake and mirin are heated before soy sauce, kombu and bonito flakes are added. The mixture simmers, steeps until cooled, and is strained to make concentrated mentsuyu.

The noodles cook in unsalted water, then drain and are gently rubbed under cold running water to remove excess starch. A separate iced-water bath chills them before thorough drainage.

Individual bamboo mats hold the noodles, topped with nori. A portion of the same concentrated sauce is diluted with iced water and divided among dipping cups.

Scallion and optional wasabi accompany the cups, added gradually as each bite is eaten. The author recalls this refreshing summer meal from Yokohama; other noodle blends and tempura pairings remain separate choices.
