Durian
Large pungent Southeast Asian fruit with rich custard flesh.

About Durian
Durian is a large tropical fruit known for its powerful aroma and rich, custard-like edible flesh. Ripe flesh is eaten fresh and is also used in ice cream, sweets, pastries, drinks, and frozen preparations. Different cultivars are valued for distinct balances of sweetness, bitterness, aroma, and richness.
The aroma can be intensely pungent, while the flesh is soft, creamy, and custard-like when ripe. Some fruit is firmer or more fibrous, and flavour becomes less sweet and more astringent when underripe. Large seeds sit within separate fleshy segments and are removed before serving.
The whole fruit has a thick husk covered with prominent spines and is divided internally into segments. It may be sold whole, opened into sections, or as separated fresh or frozen flesh. Cutting through the husk and lifting out the segments changes the fruit into portions ready to eat or cook.

Portions & preparation
Use the edible durian arils only, excluding husk and seeds, and identify fresh, frozen, dried, puréed, or cooked form. Ripeness and preparation alter texture and the portion actually eaten. References should not substitute a flavored durian product or dessert for the fruit flesh.
Compare the right form: Reference ripe durian flesh as eaten, specifying fresh, frozen, dried, cooked, or puréed form and exclusion of husk and seeds.
Diet considerations
Durian is a plant fruit. Compatibility changes when it is sweetened, dried, cooked into a dessert, blended with dairy, or combined with cereal ingredients. Plain flesh differs from durian candy, ice cream, pastry, or beverage preparations. Portion size can materially change the carbohydrate pattern, particularly for concentrated or sweetened forms.
