About Grits

Grits are coarse particles of dried maize, commonly cooked with liquid into a soft porridge. They are usually pale, though colour and flavour depend on the maize used and how it is processed. Stone-ground and more finely processed grits have different textures.

Dry grits are hard and granular; cooked grits become tender and creamy or softly grainy. Products may be made from whole-grain or degerminated maize and may be quick-cooking or require longer cooking. These forms differ from cooked whole maize and from cornmeal.
