About Pork cheek

Pork cheek is the muscle and surrounding tissue from a pig's cheek. It is a distinct, relatively small cut with visible connective tissue and, depending on trimming, some fat. Raw meat is usually pink to red; cooked cheek can become tender and succulent when given enough time to soften its connective tissue.

It is used in braises, slow cooking, grilling and chopped meat preparations. Cheek may be sold whole, trimmed, diced or cured; those forms are not nutritionally interchangeable. The amount of attached fat and connective tissue varies with butchering, and cured or seasoned cheek also differs from fresh meat.
