A FOOD TRADITION
Acehnese Cuisine
Acehnese cuisine is associated with northern Sumatra and the Acehnese people, with strong connections to Indian Ocean trade and Muslim culinary networks. Rice, fish, seafood, beef, coconut, tamarind, chilies, ginger, turmeric, and cardamom-like aromatics appear frequently, often in assertively spiced broths, curries, and fried preparations. Cooking methods include pounding spice pastes, slow simmering, grilling, and frying. Representative dishes include mie Aceh, kuah pliek u, and ayam tangkap. Although it shares ingredients and historical influences with South Asian, Malay, and other Sumatran cuisines, its combination of local produce, spice technique, and ceremonial foods warrants a distinct catalogue entry.
