A FOOD TRADITION

Acholi Cuisine

Acholi cuisine is a northern Ugandan tradition associated with Acholi communities and with foodways extending across the Uganda–South Sudan border. Millet and sorghum are important staples, prepared as firm breads or porridges such as kwon, while sesame, groundnuts, beans, cassava and seasonal greens supply sauces and accompaniments. Smoking and drying help preserve fish and meat, and greens may be cooked into tart or bitter stews. Recognizable examples include kwon with malakwang, a sour leafy-green preparation; smoked meat or fish with sesame or groundnut sauce; and millet-based porridges. The cuisine reflects both cultivation and seasonal access to wild plants and livestock.
