A FOOD TRADITION

Al-Ahsa Cuisine

Al-Ahsa cuisine is rooted in the large oasis of eastern Saudi Arabia and its long-standing links to Gulf, Iraqi, Persian, and Arabian foodways. Dates, rice, wheat, fish, shrimp, vegetables, lentils, spices, and clarified butter are prominent, with oasis produce shaping everyday cooking. Common techniques include rice steaming, stuffed and layered preparations, bread baking, date processing, and slow braising of meat or seafood. Examples include hassaawi rice dishes, date-centered breads and sweets, and preparations of fish or shrimp with rice and aromatic spices. The tradition is culturally specific to the oasis while sharing ingredients and methods with the wider Gulf, so it should not be treated as an exclusive or isolated invention.
