A FOOD TRADITION

Alentejan Cuisine

Alentejan cuisine reflects the dry interior plains and hills of southern-central Portugal, relying on bread, olive oil, garlic, coriander, pork, lamb, seasonal vegetables, legumes, and game. Rural cooking frequently transforms stale bread and modest ingredients through pounding, soaking, stewing, and slow roasting, while aromatic herbs provide much of the character. Important examples include açorda alentejana, a garlic, coriander, bread, and poached-egg preparation; migas à alentejana, fried bread crumbs traditionally paired with pork; and carne de porco à alentejana, combining pork with clams, potatoes, and coriander.
