A FOOD TRADITION

Andean Venezuelan Cuisine

Andean Venezuelan cuisine developed in the highlands around Mérida, Táchira, and Trujillo, where cooler conditions and historic links with Colombia shaped a distinctive mountain food culture. Corn, potatoes, wheat, beans, fresh cheese, pork, and trout are common, with soups and filled breads especially prominent. Characteristic techniques include grinding maize for thick arepas, slow simmering, baking, and curing or stewing pork. Representative dishes include arepas andinas, a wheat- and corn-influenced mountain arepa; pisca andina, a potato-and-milk soup often served with egg and cheese; and mute andino, a substantial hominy, bean, and pork soup. The tradition overlaps with neighboring Colombian Andean cooking.
