A FOOD TRADITION

Aukstaitian Cuisine

Aukštaitian cuisine belongs to northeastern and eastern Lithuania and reflects a farming landscape centered on rye, barley, potatoes, dairy, pork and freshwater fish. Household cooking emphasizes breads, porridges, dumplings, pancakes, stuffed preparations and fermented or brewed products, with baking, boiling, souring and smoking as common techniques. Examples include rye bread, potato vėdarai stuffed with grated potato and related grain or potato sausages, and various flour pancakes or dumplings served with sour cream. Local beer-making and farmhouse dairy traditions are also culturally important. Aukštaitian cooking overlaps substantially with the national repertoire but has a coherent regional identity.
