A FOOD TRADITION
Balti Cuisine
Balti cuisine is associated with Baltistan and Balti-speaking communities in the high mountain valleys of northern Pakistan, with related traditions across the border in Ladakh. Barley, wheat, buckwheat, potatoes, apricots, yak or other dairy products, mutton, beef, and dried foods reflect cold mountain conditions and historic trade routes. Cooking commonly uses boiling, stewing, griddle baking, and simple broths, with chili, garlic, and local herbs providing flavor. Representative foods include balti-style meat stews, skiu or hand-cut dough with meat and vegetables, and chapshoro, a stuffed flatbread. Household practice varies between valleys and urban adaptations.
