A FOOD TRADITION

Bariba cuisine

Bariba cuisine is a major northern Beninese tradition associated with Bariba-speaking communities and the Borgou cultural area, with related practices extending across present-day borders. Compared with many southern foodways, it makes especially strong use of millet, sorghum, maize, rice, cowpeas, yams, leafy vegetables, beef, goat, and poultry, alongside locally available fish. Grains may be fermented, milled, steamed, or turned into thick porridges and couscous-like preparations, while sauces are built from greens, okra, ground seeds, peppers, and meat. Examples include wassa-wassa, millet- or yam-based couscous preparations, and richly seasoned meat or leafy-vegetable sauces.
