A FOOD TRADITION

Basilicatan Cuisine

Basilicatan cuisine comes from the rugged southern region historically known as Lucania, including inland mountains and the Ionian and Tyrrhenian coasts. Wheat, durum pasta, bread, peppers, eggplant, legumes, lamb, pork, goat, and preserved vegetables form its foundation. Cooking is often rustic and slow, with roasting, braising, drying, and baking in wood-fired ovens. Representative examples include peperoni cruschi, pasta con mollica, and rafanata. Coastal areas add seafood, but the region’s strongest identity lies in its agricultural, pastoral, and intensely flavored inland traditions.
