A FOOD TRADITION

Batak Cuisine

Batak cuisine encompasses the cooking traditions of several Batak peoples around North Sumatra, including Toba, Karo, Simalungun, Pakpak, and Mandailing communities. Common ingredients include rice, freshwater fish, pork in many Batak settings, chicken, cassava, aromatic herbs, and distinctive regional peppers and spices. Techniques include grilling, boiling, smoking, and pounding herbs into intensely flavored sauces or pastes. Representative foods include arsik, saksang, and naniura, though practices vary among Batak communities and religious traditions. The category is best understood as a related family of highland and lakeside cuisines rather than a claim that all Batak cooking is identical.
