A FOOD TRADITION

Bavarian Cuisine

Bavarian cuisine is rooted in Old Bavaria and the wider Bavarian cultural region, with related traditions extending into neighboring Alpine areas. It favors wheat and rye breads, potatoes, cabbage, dairy, pork, veal, freshwater fish, and game. Common techniques include roasting, braising, dumpling making, baking, and preserving meat or vegetables. Broths, rich sauces, and sweet yeast or pastry dishes are also characteristic. Recognizable examples include Schweinebraten with gravy, Weißwurst, and Leberkäse; other familiar foods include potato dumplings, Obatzter cheese spread, and Apfelstrudel. Bavarian cooking varies between Alpine, urban, and rural areas, so it should not be reduced to beer-hall fare alone.
