A FOOD TRADITION

Belizean Mestizo Cuisine

Belizean Mestizo cuisine is especially associated with northern and western communities shaped by Maya, Mexican, and broader Yucatecan cultural exchange. Corn masa, beans, rice, chicken, pork, turkey, squash, achiote, citrus, and chiles are central, with nixtamalization, griddle cooking, roasting, braising, and soup-making among its characteristic techniques. Familiar preparations include tamales, relleno negro, and escabeche, alongside tortillas, caldo-style soups, and regional stews. The tradition is not confined by the Belize–Mexico border and overlaps with Yucatecan cooking, but Belizean households have developed their own local combinations and occasions of service. It is a recognizable regional-cultural cuisine rather than merely a collection of Mexican dishes served in Belize.
