A FOOD TRADITION
Benadiri Cuisine
Benadiri cuisine is associated with long-established coastal communities in Mogadishu, Marka, and Baraawe, whose foodways reflect Somali, Swahili, Arab, Persian, Indian Ocean, and later Italian influences. Rice, wheat pasta, fish, shellfish, meat, clarified butter, coconut, tamarind, and aromatic spice blends are prominent. Cooking commonly combines stewing, frying, rice steaming, and sauce-making, with seafood especially important in coastal settings. Representative dishes include bariis iskukaris, a spiced rice preparation; baasto, pasta served with Somali-style sauces; and sambusa, a filled pastry or fried turnover. These foods overlap with wider Somali and Indian Ocean traditions rather than belonging exclusively to Benadiri communities.
