A FOOD TRADITION

Bernese cuisine

Bernese cuisine developed across the Swiss plateau, the Emmental, and nearby foothills, combining farming, dairy production, market-town cooking, and Alpine influences. Potatoes, cabbage, beans, onions, pork, beef, cream, butter, and regional cheeses appear frequently, with roasting, braising, boiling, and baking as characteristic techniques. Meals tend to be substantial and communal, reflecting agricultural work and winter storage. Representative dishes include Berner Platte, an assortment of meats and sausages served with vegetables; Bernese rösti; and Zibelechueche, an onion tart associated with the capital’s autumn market tradition. Neighboring cantons share many preparations, but the Bernese repertory is sufficiently established and culturally recognizable to merit a regional entry.
