A FOOD TRADITION

Betsimisaraka Cuisine

Betsimisaraka cuisine comes from Madagascar’s humid eastern coast and rainforest-facing lowlands, where rice is combined with freshwater and marine fish, shrimp, crab, pork, poultry, cassava, leafy greens, and coconut. Coastal access and the region’s tropical agriculture give the tradition a stronger seafood and coconut profile than many highland foodways, while ginger, turmeric, garlic, and local peppers commonly season broths and stews. Cooking often involves simmering fish or meat with greens, preparing coconut-based sauces, grilling seafood, and serving several accompaniments with rice. Examples include coconut fish stew, crab cooked with coconut, and pork with pounded cassava leaves.
