A FOOD TRADITION

Bhojpuri Cuisine

Bhojpuri cuisine is practiced in Nepal's central and eastern Tarai, particularly among Bhojpuri-speaking communities, and is part of a wider cross-border tradition extending into northern India. It centers on wheat, rice, pulses, gram flour, seasonal vegetables, mustard oil, dairy, and robust dry spice mixtures. Roasting, griddle cooking, deep-frying, stuffing, and slow simmering are common techniques. Representative foods include litti with chokha, sattu-filled breads, ghughni, and thekua. The entry should distinguish Bhojpuri food culture from the broader Madhesi or Nepali labels while avoiding claims that its dishes originate exclusively in Nepal.
