A FOOD TRADITION
Bobo Cuisine
Bobo cuisine is associated with western Burkina Faso, especially the Bobo-Dioulasso area and surrounding communities, and belongs to a wider western Burkina and northern Côte d’Ivoire cultural zone. Staple foods include sorghum, millet, maize, rice, fonio, cowpeas, groundnuts, okra, leafy vegetables, and locally available fish or meat. Grains are pounded, milled, steamed, or fermented, while sauces are simmered with greens, hibiscus leaves, okra, or groundnut paste. Examples include tô with leafy or okra sauce, maize or sorghum porridges, and fonio-based festive dishes. Urban Bobo cooking also reflects trade, migration, and neighboring Bisa, Dyula, and Samo practices.
