A FOOD TRADITION
Bornholm Cuisine
Bornholm cuisine is the food tradition of Denmark's Baltic island, shaped by fishing, comparatively strong local farming, and long connections across the Baltic Sea. Herring, cod, smoked fish, rye bread, potatoes, dairy, lamb, berries and mustard are recurring ingredients. Smoking, salting, drying, baking and open-fire cooking are characteristic techniques, reflecting the island's historic need to preserve seasonal catches and produce. Recognizable examples include smoked herring served on rye, the open-faced dish sol over Gudhjem, and regional smoked or cured fish preparations. Influences from nearby Scandinavian, German and Baltic communities are part of its context rather than evidence of an isolated origin.
