A FOOD TRADITION

Brokpa Pastoral Cuisine

Brokpa pastoral cuisine is associated with high-altitude communities of eastern Bhutan, especially the semi-nomadic yak-herding culture linked with Merak and Sakteng. Its ingredients reflect pastoral life and difficult mountain environments: yak meat, milk, butter, cheese, barley, buckwheat and preserved foods. Cooking emphasizes boiling, stewing, drying and producing durable dairy products that can travel with herding households. Examples include yak-meat stews, dairy-rich broths and buckwheat pancakes or dumplings, alongside shared Himalayan foods such as thukpa. The repertoire should be understood as a living pastoral tradition within Bhutan and across neighboring highland areas, not as an exclusive claim over individual dishes.
