A FOOD TRADITION
Bumthang Cuisine
Bumthang cuisine belongs to the central Bhutanese valleys, where cooler conditions support distinctive reliance on buckwheat, barley, potatoes, dairy and preserved meats. Buckwheat is milled into noodles, pancakes and dumpling wrappers, while yak and cattle products contribute butter, cheese and rich broths. Fermentation, drying and hearth cooking are recurring techniques, and chili-cheese preparations remain part of the wider local repertoire. Examples include puta, buckwheat noodles; khuley, buckwheat pancakes; and hoentoe, buckwheat dumplings filled with greens, cheese or other local ingredients. These foods are shared beyond Bumthang in some settings, but central Bhutan provides an important cultural and agricultural context for them.
