A FOOD TRADITION
Calabrian Cuisine
Calabrian cuisine arises from the mountainous toe of the Italian peninsula, with Ionian and Tyrrhenian coasts and a strong tradition of household preservation. Hot peppers, eggplant, tomatoes, onions, olives, citrus, pork, goat, swordfish, and tuna are prominent, alongside wheat and legumes. Drying, salting, curing, smoking, and preserving vegetables in oil are characteristic techniques. Representative examples include ’nduja, pasta alla Tropeana, and pesce spada alla ghiotta. The cuisine shares southern Italian foundations while retaining distinctive spicy, preserved, and coastal expressions.
