A FOOD TRADITION

Castilian Cuisine

Castilian cuisine refers to the broad inland traditions of the central plateau, especially Old and New Castile, where dry climates and pastoral agriculture encouraged durable ingredients and robust cooking. Wheat bread, legumes, lamb, pork, game, garlic, paprika and seasonal vegetables are prominent. Roasting in wood-fired ovens, braising and hearty soups are characteristic techniques. Examples include cochinillo asado, roast suckling pig; sopa castellana, a garlic-and-bread soup often enriched with egg; and lentejas estofadas, stewed lentils. The category is intentionally broad and overlaps with neighboring inland traditions.
