A FOOD TRADITION

Chagga Cuisine

Chagga cuisine is associated with the slopes and foothills of Mount Kilimanjaro, where Chagga households have long combined banana cultivation with beans, maize, livestock keeping, and locally available greens. Green and ripe bananas are boiled, mashed, or simmered with meat, while beans and maize provide everyday staples. Characteristic preparations include thick banana-and-meat soups, bean stews, and dishes of cooked plantain or banana served with sauces. Mtori, a gently simmered banana and meat soup, and machalari, a green-banana stew, are recognizable examples. Coffee-growing and mountain agriculture shape the broader food setting, although the cuisine is best understood through household cooking rather than a single fixed menu.
