A FOOD TRADITION

Chattogram Cuisine

Chattogram cuisine developed around the southeastern port, coastal fishing communities and historical connections with Arakan, the wider Bay of Bengal and inland Bangladesh. Rice, marine and river fish, beef, dried fish, coconut, green chilies and pungent spice pastes are central. Cooking commonly combines roasting, slow simmering and vigorous frying, with strong attention to communal feasting. Mezban, a beef-centered ceremonial meal, is especially characteristic, while shutki and seafood reflect the coastal setting. Recognizable examples include mezbani beef, kala bhuna and shutki bhorta; kala bhuna is a deeply reduced, dark meat preparation rather than a generic everyday curry.
