A FOOD TRADITION

Chettinad Cuisine

Chettinad cuisine is a distinctive Tamil-region tradition associated with the Nattukottai Chettiar communities and the Chettinad area of southern Tamil Nadu. It is known for aromatic spice blends featuring black pepper, fennel, kalpasi, star anise, cloves, cinnamon, and dried chilies, combined with shallots, coconut, and curry leaves. Roasting and grinding spices, building concentrated masalas, and slow-cooking meat are characteristic techniques. Representative dishes include chicken Chettinad, mutton kola urundai, and kuzhi paniyaram. The cuisine reflects both local ingredients and historical mercantile connections, while remaining part of the wider Tamil culinary landscape.
