A FOOD TRADITION
Colombian Pacific Cuisine
Colombian Pacific cuisine develops along the humid Pacific lowlands and is strongly shaped by Afro-Colombian, Indigenous and coastal communities. Fresh fish, shrimp, crab, piangua shellfish, coconut milk, green plantain, cassava, rice and local herbs are central. Cooking commonly uses wood fires, pounding, steaming in leaves, and coconut-based stewing, reflecting riverine and mangrove environments. Representative preparations include pescado encocado, tapao de pescado and arroz con piangua. The tradition shares ingredients and techniques with Pacific Ecuador and Panama, while maintaining locally specific combinations of seafood, plantain, aromatic herbs and coconut.
