A FOOD TRADITION

Coptic Cuisine

Coptic cuisine is a religiously shaped Egyptian foodway centered on the fasting calendar of the Coptic Orthodox community. During fasts, cooks build meals around beans, lentils, grains, vegetables, herbs, oils, and pickles, while feast days bring richer preparations involving dairy, eggs, or meat. The tradition is less a separate ingredient set than a disciplined cycle of substitutions, household recipes, church observances, and celebratory meals. Examples include ful medames, lentil soups, and vegetable mahshi prepared in fasting forms, alongside festive dishes such as fatta and kahk. Coptic foodways remain closely connected to wider Egyptian cooking and should be documented as a cultural tradition rather than an isolated national cuisine.
