A FOOD TRADITION
Crimean Tatar Cuisine
Crimean Tatar cuisine is the cooking tradition of the Crimean Tatar people, rooted in Crimea and shaped by Turkic, steppe, Black Sea, and later exile experiences. It emphasizes lamb and beef, dough, onions, peppers, tomatoes, dried fruit, nuts, and aromatic herbs, with baking, simmering, grilling, and filled-dough preparation especially important. Celebrated dishes include chebureki, fried semicircular meat pastries; çiberek, a closely related regional form; qantarma, a preserved or dried meat preparation; and yantyk, a griddled meat-filled flatbread. The tradition also includes soups, pilafs, stuffed vegetables, and festive pastries, and overlaps historically with neighboring Black Sea cuisines.
