A FOOD TRADITION

Cyrenaican cuisine

Cyrenaican cuisine belongs to eastern Libya, especially the Benghazi, Derna, Ajdabiya, and Jabal al-Akhdar areas. Its foodways reflect Mediterranean coastal exchange, eastern Arab influences, pastoral cooking, and proximity to Egypt. Wheat, barley, dates, olive oil, lamb, chicken, fish, legumes, and locally available herbs are central. Techniques include cooking grains and doughs with rich broths, slow simmering meat, baking flatbreads, and preparing simple charcoal-grilled foods. Examples associated with the region include bazeen in eastern styles, couscous with meat or vegetables, and pasta or rice dishes served with spiced tomato-based sauces. Seafood is especially relevant along the coast.
