A FOOD TRADITION

Czech Silesian Cuisine

Czech Silesian cuisine represents the foodways of Silesian communities in the northeast of Czechia, within a broader Silesian cultural area extending into Poland. Its cooking combines Czech, Polish, German, and, in some districts, Slovak influences. Potatoes, cabbage, grains, pork, smoked meats, mushrooms, onions, and dark breads are recurring staples, prepared in soups, skillet dishes, dumplings, and baked meals. The tradition is particularly associated with robust everyday cooking and festive pastries rather than a single standardized menu. Examples include kyselo, a sourdough-based soup in northeastern forms; bramborové placky, potato pancakes; and local versions of cabbage-and-meat stews related to bigos.
