A FOOD TRADITION

Epirus Cuisine

Epirus, in northwestern Greece, is known for mountain, pastoral and village cooking shaped by rugged terrain and historical links with Albania and the wider Balkans. Cornmeal, beans, wild greens, feta, sheep and goat dairy, river fish and preserved meats are central ingredients. Slow baking in wood-fired ovens and the preparation of layered pies, especially with handmade filo, are characteristic techniques, alongside soups, stews and charcoal grilling. Representative dishes include hortopita, a greens pie; trachanopita, made with fermented grain and dairy; and hearty bean soups such as fasolada. Regional cooking varies between Zagori, Tzoumerka, Arta and coastal Preveza.
